VODKA PASTA (YOU HAD ME AT VODKA)

Gigi Hadid, most commonly known for her modelling career created what would be widely seen as the most perfect combo – booze and pasta. What’s not to go crazy for? With the addition of a generous pinch of chili flakes, this dish really packs a punch and gives you that pasta hit we all crave.
Now, Gigi gives it hell on the runway and clearly also in the kitchen, so if like us, your screen time soared in the lockdowns, you won’t have missed this recipe. We had to give it a go and here’s our take…
1 diced onion
2 gloves garlic
2.5 tbsp tomato puree
200ml double cream
1 tsp paprika
1 tsp chili flakes
1 tbsp butter
150g grated parmesan
400g pasta
2 – 3 tbsp vodka
Fresh basil
Step 1. Half fill a pan with water, add a pinch of coarse salt and bring to the boil
Step 2. In frying pan, heat a dash of olive oil and then add in the diced onion and garlic, sweat these down a little before adding in the tomato puree.
Step 3. Lightly cook off the tomato puree, with the addition of the paprika and chili flakes cook this all down until it is a paste, once you have reached a good consistency add in the double cream.
Step 4. Add the pasta into the boiling water and once the starch begins to come out, save a mugful of this water for later.
Step 5. Drain the pasta.
Step 6. To the sauce, add in the vodka, butter, mugful of starchy pasta water and 100g of the grated parmesan, give this all a good stir and leave to simmer on a low heat.
Step 7. Tip the pasta into the sauce, give it a good stir to ensure all is coated.
Step 8. Dish up, top with remaining parmesan and a good sprinkle of basil, and mangiamo baby! (that means “let’s eat” in Italian!)
